Description
This Mexican version of the
mortar and pestle is used to
grind a variety of items, from
spices and dried chiles to
fresh ingredients for salsas
and guacamole. Each piece is
made from volcanic rock and
has a rough texture that works
most efficiently to break down
ingredients and extract
flavors. On its own, the bowl
can be heated over a grill or
stovetop and used to serve
molcajeteadas with seafood or
grilled meats, or make fresh
guacamole tableside for an
impressive presentation. To
prevent liquids from seeping
through the naturally-porous
material, the molcajete should
be rinsed thoroughly to remove
sediment and cured prior to
using. Do not wash with soap,
as detergents may remain
present and affect flavors.
